As I have been learning to be a bit more balanced with my diet, I found the easiest start up was breakfast.
Breakfast is that cherry platform where your options can truly be endless if you desire. Currently, I have shuffled away from my favorite cereal crunchies and stepped into a more refined meal. I usually leave these sort of meals for the weekend, but have lately, been integrating it into my weekly rituals. I have to say, I wish I had done this sooner.
Now I know many have heard of a breakfast bowl. Some have been sweet influenced some not. This one felt like a good pairing between them both. Between the hot runny egg and the warmed spinach underneath, to the sweet plump of a pear. Top it off with a little fine grating of Parmesan and you have yourself a winner.
So, for starters I started with these:
Spinach leaves, Parmesan, Egg, sliced pears.
(I added another egg as well)
I cooked the eggs in a bit of brown butter and tried to have a bit of runny yoke in the center. I cleaned up the spinach leaves and just gently shook out the excess water. I sliced up a ripe pear and laid it on the bed of greens next to the fried eggs. ( For an added touch of flavor I used Salad Supreme on my eggs)
Next I added a bit of Parmesan and voilà.
I believe you could add some mango, or Apple to this dish instead of pear if you desired. If you are not feeling a fried egg, a bit of scrambled or poached eggs would do nicely as well.
